Making a roux for the turkey/duck/sausage GUMBO. I was taught to stir the roux until it becomes the color of “Ronald Reagan’s brown suit,” OR, as in this case, until the smoke defector goes off. Cook fat and flour until the flour is toasted, minimally for gravy, and until brown for gumbo. Recipe link in profile. #dontstopstirring #alwaysastudent #gumbo

Learning to make broth is one of those skills that will make you feel so accomplished as a cook. Give it a try and let me know how you do! How to Make Turkey Broth for Gumbo: place the turkey carcass in a large stockpot. If you have any saved rotisserie chicken carcasses in the freezer, add those to the pot, as well. Add one large onion, top third of a celery plant, one large carrot, 10 peppercorns, 2 tablespoons of cider vinegar. No salt. Simmer all day. Strain stock through a large colander positioned over a large container. I use an 8-quart Cambro. Take the bones from inside the colander and put them back into the empty stockpot. We’re going to rinse those bones to get more broth. Add about a quart of hot water to bones and stir. Pour that stock through the colander into the container that has the first batch of stock in it. #nowaste Next, clean the stockpot and then run all the stock from the Cambro through a fine sieve into the empty stockpot for one last strain. Pour that sieved broth into a clean Cambro and chill overnight. Next, take bones from colander and spread out on a sheetpan. Allow to cool. Pick all the meat from bones. Watch out for tiny bones. Store meat in fridge until ready to make gumbo. Once broth is chilled, scrape fat off top. Store until ready to make gumbo. Add broth from another source if needed to get a total of 8 quarts. Save your turkey carcass! One of my most delightful days in the kitchen was the Sunday afternoon when @brucedobie came over to show @annshayne and I how to make South Louisiana turkey and sausage gumbo. Even if you don’t have time to make it this weekend, freeze the carcass, mix it with a few other frozen rotisserie chicken bones and try it when you have time. You will feel so accomplished as a cook when you do. “The roux is the foundation of something miraculous.” The recipe is easily divided.
