Tortilla Lasagna. Today our @thenashvillefoodproject cook team made 25 hotel pans of lasagna. Bottom layer: enchilada sauce, then a layer tortillas, followed by diced, seasoned sweet potatoes with cilantro, next a layer of home-cooked pinto beans, then fresh spinach, cheese, more tortillas, more enchilada sauce, and finally more cheese. If Valentine’s Day makes you want to make a heart-shaped cake, as it does me, may I suggest this one? Growing up as the only girl with six brothers, I made this cake every Valentine’s Day (single-decker, not this giant double-decker!) for my brothers. I totally ❤️ them and they and their friends were a good audience for my constant desire to try new baked goods. I am a baker at heart. This recipe for chocolate cake is my all time favorite and the only one I use now. The ganache frosting is to die for. Change the ratio of cream to chocolate and it makes a great hot fudge sauce on ice cream. Recipe link in profile.
