How to Make Greek Yogurt at Home

I recently stopped by my daughter-in-law’s house to visit her mother, Viji, and her grandmother, Hema. Knowing how much I love her cooking, Viji, whose kindness and generosity know no bounds, asked if I was hungry and offered to prepare a bowl of biryani and rice for me. I gratefully accepted.

Usually, when Viji makes biryani, she serves it with a bowl of raita, a refreshing yogurt-based condiment that tempers the spices in biryani. This time, Viji offered a bowl of plain yogurt (known as perugu in Telugu) which she often serves over rice and curries. I scooped up a few spoonfuls and poured them over the biryani. As I licked the spoon, I was struck by how sweet, tangy, and light her batch of yogurt tasted. It was unlike any yogurt I had had before. I asked Viji what brand it was and she told me she made it herself. As soon as she said the yogurt was homemade, my hand was already searching the depths of my purse for a pen and a piece of paper. I had to learn how to do this.

Viji explained how making yogurt was something she and her family have been doing almost daily their entire lives, both in India and in the United States. In describing how she made it, she didn’t use off-putting words like “live cultures,” “starter,” or “fermentation.” Instead, she told me simply to heat milk in a microwave until just before it starts to boil, allow it to cool until you could comfortably stick your finger in it (not scalding and not lukewarm — somewhere in between). When it got to that temperature, I was to add a spoonful of yogurt from the last yogurt batch, stir it, cover it with plastic wrap, and put it in the warmed microwave to set undisturbed overnight; it would be yogurt in the morning.

She sent me home me with a small jar of yogurt for “starter” and an encouraging smile. Here is a photo of Viji and our daughter, Meera, from a cooking class they taught to Meera’s friends a few years ago.

I made my first batch that same evening. When I checked the microwave the following morning, the preparation had thickened. I had made yogurt! I felt so accomplished. Surprisingly, it tasted exactly like Viji’s batch: sweet, light and tangy. Delicious in its plainness. Out of sheer delight in creating something as universally known as yogurt,  I proceeded to share a few spoonfuls with everyone who walked in the door for the next few weeks.

How does milk become yogurt?

Milk is made of water, fat, proteins, minerals, and a milk sugar known as lactose. When the milk is heated, its native bacteria are killed. As the milk cools and the new, live bacteria in the starter culture are introduced, the new bacteria feed on the milk’s lactose (sugar) and turn it into lactic acid. As it does this, the milk is transformed, or ferments, into a soft curd — yogurt.

It is a very simple and time-honored process. People have been making yogurt, kefir, and cheese from milk, using bacteria, yeast, or fungi, for thousands of years to preserve milk’s shelf life. It is only in the last one hundred plus years, with the advent of refrigeration, that people have been able to store milk in liquid form in their homes.

The Starter Culture
You can make your own yogurt using a starter culture that has been given to you, as I did, or you can buy commercially prepared yogurt with “live” or “active” cultures from the grocery store. To make this recipe replicable for readers,  I purchased four different commercial brands of plain, unsweetened yogurt to test the process and each brand worked. As long as the container of yogurt has these two live bacterial strains listed, you will be able to make yogurt: Lactobacillus bulgaricus ( L. bulgaricus) and Streptococcus thermophilus (S. thermophilus). Other strands of bacteria are often added by manufacturers to create the unique taste and texture of each brand.

This label is from a container of Desi, a nice plain yogurt I bought at Patel Brothers, a fabulous Indian grocery store on Nolensville Road in Nashville.

All four brands of yogurt produced a semi-solid yogurt that tasted identical to the batch from which the starter came. Words to the wise: be sure you like the taste of the plain yogurt you choose because that is how your homemade batch will taste.

The Milk
Any whole or reduced-fat milk will do. You could also use soy or coconut milk, although I have not tried these.

Ingredients:

4 cups milk
1 tablespoon plain yogurt with live cultures

Instructions:
Pour milk into a tempered glass bowl suitable for heating.

Heat milk uncovered in the microwave, or on the stovetop, until it reaches 180º. In my microwave, this takes nine minutes. If you do not have a digital thermometer, heat milk until it just begins to boil. Do not let it boil over.

Remove hot milk from the microwave to a padded surface and allow it to cool to 115º.

Add a spoonful of yogurt starter and stir. I add one tablespoonful of starter when using four cups of milk and a heaping teaspoon when using two cups. Cover mixture with plastic wrap and let rest, undisturbed, for 8-10 hours in a warm, dark place like a microwave, an oven, or on a shelf in a kitchen cabinet.

If it doesn’t set, let it sit a little while longer. For some reason, it took twelve hours for one of the brands to form a curd. I am not sure why, but it did eventually set. Once set, refrigerate the yogurt. Be sure to set aside a small amount to use as starter for the next batch!

Yogurt Cheese (aka Labneh and Greek-Style Yogurt)

Since making that first batch, I’ve started draining yogurt to make “cheese yogurt.” This process of draining yogurt to separate out the whey is also how Greek yogurt and labneh, a Lebanese cream cheese, are made.

The resulting soft cheese is delicious spread on bread and topped with honey or preserves.

Or, it can be served as a savory dish and spread on pita or toast and topped with olive oil, freshly chopped herbs, slivers of green onion, sea salt, and freshly cracked pepper. The flavor is amazing!

To make yogurt cheese, I place a cheesecloth over a fat-separator which has a built-in colander. You could also line a regular colander with cheesecloth.

Allow yogurt to drain for a few hours or overnight in the refrigerator.

This method produced two cups of whey and two cups of yogurt cheese from a four-cup batch of yogurt.

I’ve been making two batches of this yogurt cheese, which is rich in protein and calcium, every week for the last month. Our family cannot get enough of it. The good news is if you don’t feel like making your own yogurt, you could buy commercially prepared yogurt and drain it.

Mom’s Monkey Bread, circa 1970

I wasn’t planning on writing another blog post before Christmas, but I have a hard time saying No to a recipe request from one of my brothers, especially when they bring up food memories that involve our mother. My brother Sam wrote, “Judy, Mom always made sticky buns in a cake pan that had the centerpiece cut out. They were very popular. Do you remember how to make them?”

He was talking about Monkey Bread. I really had to think hard to remember how Mom made it back in the Seventies. Remembering brought me to a happy place in our childhood kitchen with the big bay window over the sink that overlooked the entrance to Bay View. I was happy for the challenge.

Sam, here is my first attempt in forty years at making Monkey Bread. The big white blob is cream cheese frosting. Although I knew what kind of pan you were referring to when you wrote “a cake pan that had the centerpiece cut out,” I didn’t have an angel food cake pan, so I used a Les Creuset Dutch oven. It did the job. Do not use a tube pan with a removable bottom as the butter will leak out and make a mess.

When I went to the grocery store to find loaves of frozen bread dough, it was nice to see they still stocked the five-pound packages I used as a kid. You will need two loaves for this recipe. Be sure to defrost them about thirty minutes before you plan to bake. There is no need to let them rise first.

Ingredients:

2 loaves (2 pounds) frozen bread dough, thawed
1 stick (½ cup) butter
½ teaspoon vanilla extract
½ cup granulated sugar
¼ cup packed brown sugar
1 tablespoon ground cinnamon
½ cup chopped walnuts or raisins (optional)

Instructions:
Preheat oven to 350º
Grease a deep 9 or 10-inch cooking container.

Mix together sugars and cinnamon.
Melt butter in a pan until just melted. Stir in vanilla. Remove from heat.
Cut loaves into pieces, as shown in the photo below.

Drop individual pieces of dough into the butter and stir until each piece is evenly coated

Take each piece out and roll it in the cinnamon sugar—place in a greased baking pan. Let rest for about 15 minutes. It does need to rise in the pan before cooking.

Bake for about 45 minutes. The dough will rise as it cooks. The top layer will turn golden brown and be firm to touch when it is ready. If you don’t cook the bread the full amount of time, the lower dough balls will be doughy even though the bread looks done on top.

Let cool for five minutes and then flip onto a serving plate.

Frosting:

½ package cream cheese, softened (½ pound)
2 tablespoons butter, softened
1 tablespoon milk
1 cup confectioner’s sugar, sifted
¼ teaspoon vanilla
dash of salt

Mix ingredients together until well-blended. Thin with more milk if desired.

Crab Apple Jelly

The first year that I noticed my two crab apple trees were loaded with fruit, it was because my mother was outside cutting branches from them to use in floral arrangements for a party.

My mother would make beautiful arrangements from random plants when she visited; crab apple decorations shouldn’t have surprised me. What did surprise me was the trees were loaded with gorgeous, red fruit and the fruit was edible. The next year, I picked every last crab apple off those trees and canned my first jars of crab apple jelly.

We have two crab apple trees in our backyard, both planted by the Nashville Electric Service through their Tree Replacement Program. It took about five years for them to start producing fruit. They are hardy and do not require extra care.

This fall, when I went to check on my trees for fruit, they were bare. I have no idea what happened; the trees were loaded in early August. Fortuitously, my good friend Deb Hudson’s, crab apple tree was full of fruit and my husband and I were able to pick fourteen pounds in no time.

Making Jelly

Jelly is made from the strained juice of cooked whole fruit, whereas jam is made with thin-skinned berries or tree fruits (the ones with easily extracted nuts, i.e. peach) that are crushed and the pulp retained. Both jellies and jams use a high concentration of sugar as the preserving agent and rely on pectin for the congealing or thickening agent.

Making jelly requires two cooking steps. First, fruit is cooked and strained to release the pectin from the fruit’s cell walls. Second, the pectin-laden juice is boiled vigorously with sugar until the sugar and water concentration hit the sweet spot — the point at which the mixture will congeal when it is at room temperature.

That sweet spot is known as the “set point” in the world of jelly-making. If you cook the jelly mixture past the set point, you end up with hard candy. If you don’t cook it long enough, you end up with a fruity syrup. Get it right, and you have a home-made delicacy at the ready in your refrigerator. This very small risk of utter failure, that, let’s face it, is of no consequence to the world, is one of the things that make successful jelly-making such a thrilling and deeply satisfying experience for cooks.

Establishing the set point can be tricky. There’s a reason you never see the direction “cook jelly until it sets” in a cookbook. If you cooked the fruit mixture until it thickened to a gel, by the time it cooled, it would indeed be hard candy. Instead, you need to learn how to test for the set point while you are cooking so you can remove the mixture from the heat at the correct time. Fortunately, cooks have developed a few time-honored methods for making this determination that we’ll get to.

To improve your chances of achieving a good set, it helps to understand the key players in the process: pectin, sugar, and acid.

Pectin Demystified

The word pectin comes from the Greek “pekitikos” and means curdled or congealed. As fruit is cooked, its cells expand and rupture, releasing pectin into the pulp. Pectin strands are complex chains of carbohydrates found in the leaves, stems, flowers, and fruits of plants. Pectin gives structure to plants.  Accordingly, as fruit becomes overripe, its pectin content diminishes, and the fruit looses its shape. Jelly is made from a balanced mixture of strained fruit juice and sugar, held together by a webby network of these long pectin strands.

Before you begin making jelly, it helps to have an idea about the natural pectin content of the fruit you are preserving. Check out this chart to learn the pectin and acid content of most fruits. One thing you will notice right away is that pectin and acid levels often correspond to one another.

Acid? What’s acid got to do with it?

Acid helps release pectin from fruit. Later, it helps with the gelling process by creating the right environment for pectin strands to bond. It also improves the color and flavor of jelly. Some fruits are acidic by nature, especially the tart ones like crab apples and cranberries. Others, like pears and strawberries, are sweet and subsequently lower in acid. They often need an outside source of ascorbic acid. Lemon juice is the most common acidifier used when making jams and jelly.

Sugar 

Sugar is a mighty natural preservative. It is right up there with salt as an ingredient that will draw out moisture from fruit and stop micro-organisms from growing and spoiling food. Don’t add sugar to fruit until after it has softened as sugar inhibits the release of pectin. Once the fruit is softened and ready to be boiled down, the addition of sugar helps the pectin to gel.

Fruit juice needs sugar, and lots of it to preserve fruit for long-term storage. As a rule of thumb, add sugar to juice using a 1:1 ratio (one cup juice gets one cup sugar) for high-pectin, high-acid fruits. You can play around with this amount as you gain experience with the various amounts of pectin and acid in fruit.

Testing for Set Point

To test for set point, first take the pot off the heat. I use the “flake” or “sheeting” test. Scoop up about a teaspoonful of hot liquid with a wooden spoon. Let the liquid sit there for five seconds to cool slightly and then tilt the spoon and watch the liquid drip. In the beginning, the drops will drip in a steady stream indicating the liquid needs to boil more. Soon, the drops will form into tiny triangles indicating the pectin network is forming. When the mixture is ready, the last drops pouring off will run together. This is known as sheeting.

By removing the test liquid from the heat and air-cooling it, you’ve given yourself a quick glimpse of what the liquid will do when it cools down to room temperature. You’ve made an educated guess.

Recipe for a Small Batch of Crab Apple Jelly

My husband and I made two batches of jelly; one was a small batch that used 3.5 pounds of apples and the other was a large batch that used the remaining 10.5 pounds. It took 12 minutes for the small batch to reach set point and 45 minutes for the large batch. The difference in time was due to the large amount of water that had to be evaporated from the large batch.

Before you start cooking wash jelly jars in the dishwasher. You want the jars to be warm when you fill them. Boil the lids in water for five minutes before using. Use tongs to handle jars and lids.

Small Batch Jelly Yield: 6 cups

Ingredients:
3½ pounds firm, crab apples (8-9 cups) which yield 3½-4 cups of juice
Enough water to be level with apples in the pot (3-4 cups)
3  5-inch sprigs fresh rosemary
zest of half a lemon
about 4 cups granulated sugar (1 cup sugar: 1 cup juice)

Instructions

First: Cook the Fruit

Wash crab apples and remove leaves and most of the stems. Inspect fruit for rot and black spots. Discard less than perfect fruit.

Place apples, zest, and rosemary in a 6-8 quart stainless steel saucepan. Pour water into the pot until it is level with the crab apples, about 3-4 cups. Do not add sugar, yet.

Bring fruit and water to a boil over medium heat. Turn heat to low and simmer for 15 minutes, stirring occasionally.

Remove pot from heat and use a potato masher to break up the apples. Return to heat and continue to simmer until fruit is soft — another 5 or 10 minutes. Do not cook longer because you will run the risk of destroying the pectin.

Place a muslin-lined sieve over a large, clean bowl. Pour cooked fruit in and allow mixture to drain overnight. If you push it through the sieve with force, your juice will likely become cloudy.

Measure juice. You should have about four cups. If you don’t, place a heavy object on top of the pulp to slowly release more juice. Sometimes I drizzle a little hot water over the pulp and use what drips out to make up the difference and get me to four cups.

Next: Make the Jelly

Pour juice into a clean, deep, wide, heavy-bottomed saucepan that allows room for boiling a liquid that is going to froth and rise about four inches.

Bring fruit juice to a simmer over medium heat. Add sugar and stir over low heat until sugar has dissolved.

Turn up the heat to medium and bring mixture to a low rolling boil. A rolling boil is when the entire surface of the liquid is boiling, not just the edges.  After five minutes start checking the juice for set point. Remove the pot from the heat each time you check.

At first, the rolling boil will be frothy and rise up the sides of the pot. Watch carefully and control the frothiness by adjusting the heat. Otherwise, the mixture will boil over and make a mess.

Continue to test for sheeting until you reach set point. Immediately remove pot from heat it is reached. Skim any surface residue with a slotted spoon.

Finally: Store the Jelly

Ladle hot jelly into clean, warm jars, leaving ¼ inch of headspace. Wipe the rims with a clean damp cloth. Cap them and turn them upside down and allow to cool. This helps give the jars a good seal without processing, but unless they are processed in a boiling water bath, they will need to be stored in the refrigerator until ready to use. Alternatively, you could heat process them.

Tortillas with Vegetable and Egg Filling

The star of today’s post is the tortilla. The uncooked tortilla. When freshly cooked on the stovetop, tortillas are light, moist, tender, and infinitely tastier than the premade, dry and inflexible ones that come stacked in a bag at the grocery store. Doesn’t this look appetizing?!

Had these been around when my children were young, they would have been in my weekly dinner rotation for those days when my afternoons were swamped with afterschool activities. And, for picky-eaters, let the children pick the fillings!

There are no preservatives in these tortillas, only wheat flour or cornmeal, depending on which variety you purchase, water, canola oil, and salt. They cook in under a minute, and you can buy them in the refrigerated section of most grocery stores, or in bulk at Costco.

How To Cook a Tortilla

Preheat a non-stick, ungreased sauté pan on medium-high heat. When the pan is good and hot, add the tortilla.

The tortilla should start to puff up and bubble within a few seconds, but only if your pan is preheated. If it puffs too high, pop the bubble with the edge of a spatula.

After about 30 seconds, use tongs to flip it over. Either fill the tortilla immediately with toppings of choice or, if you plan to make a few tortillas, go ahead and cook five or six and keep them warm in a towel.

The Fillings:

There are so many ways to fill a hot tortilla, or not. You could just brush them with olive oil or butter. They can also be eaten for breakfast, lunch, snack or dinner.

Zucchini and Onion Filling (my fave!)

My favorite way to make tortillas is with this zucchini and onion filling. This recipe makes a lot (4 cups) but can easily be halved. It stores well in the fridge to keep available to make tortillas or bruschetta with melted cheese on top.

Ingredients

¼ cup olive oil
4 cups unpeeled, shredded zucchini (1¼ pounds)
4 cups chopped tomatoes (2 pounds)
1 cup diced onion (6 ounces)
2 crushed garlic cloves
1 teaspoon sea salt
1/2 teaspoon garlic pepper
Shredded cheese such as a Mexican style blend

Instructions:

Saute olive oil, garlic, and onion together for two minutes on medium heat. Do not brown the garlic (ever!). Add veggies and sauté for ten minutes on medium-high heat.

The high heat helps cook down the liquid in the pan.

Next, spread the filling on half of a cooked tortilla, sprinkle with cheese, fold the other half over and enjoy!

Scrambled Egg Filling

Here are the tortillas filled with eggs — soft taco or quesadilla style.

I scrambled the eggs in olive oil first. Next, I added the zucchini and onion mixture, but you could just as easily use jarred salsa, or skip both and add bacon or sausage.

Next, I added chopped rotisserie chicken and shredded cheese and topped it with another tortilla to make a quesadilla.

You could just as easily fold a single tortilla in half or roll it up as a wrap.  With children, it’s always nice when you can give them this kind of unimpactful choice that doesn’t create extra work for Mom.
